A Simple Soup for Tired Evenings

When energy is low and hunger is high, this gentle vegetable soup asks almost nothing and gives a great deal.

I cook best when the recipe respects the day I am having.

This soup is that kind of recipe: onion, carrot, whatever greens remain, stock, a little oil, salt, and time. No performance. Just warmth in a bowl.

How I make it

  1. Soften a chopped onion in olive oil until sweet.
  2. Add carrots and any sturdy vegetables you have.
  3. Cover with stock or water, simmer until tender.
  4. Finish with salt, pepper, and a squeeze of lemon if you like brightness.

Serve with bread if you have it. Eat slowly if you can. Cooking does not have to be impressive to be kind.
